I have to confess, every time I come back to the Philippines….even though relatives forbids me to eat them, I love Kwek Kwek and Tukneneng (Deep Fried Orange Tinged Boiled Eggs). Like Filipino fish balls and squid balls, the sauces that comes with these street food morsels are the key that leads you to that food nirvana experience. It’s the combination of the sauce and the deep fried street food delight that makes you keep on coming back for more. Unfortunately I have never encountered the Sawsawang Pipino (Cucumber Dipping Sauce) that goes with Kwek Kwek and Tukneneng and it intrigued me so much that I have to make my own version of the Sawsawang Pipino at home.
The recipe is dead easy to make and quite addictive to have with Kwek kwek and Tukneneng. All I can say is “Ang Sarap!!!” (So delicious!).
SAWSAWANG PIPINO (Filipino Cucumber Dipping Sauce)
2 small Lebanese Cucumber
1 small onion
2 cloves garlic
2 tbspn +2 tspn soy sauce
2 tbspn +2 tspn white sugar
1 cup white vinegar
1/4 cup water
good pinch of pepper
*used U.S Measuring Cups & Spoons
~ Ready your ground pepper, sugar, vinegar and soy sauce.
~ Peel your garlic cloves and with the flat side of your knife, crushed them. Take off the skins of your cucumbers and onion. Finely dice your onion and with your cucumbers, cut in half, lengthwise and take off (scrape) the pulp/seeds centre with a spoon….diced into bite size pieces.
~ Mix all the liquid ingredients together, then add in your sugar, crushed garlic, ground pepper and diced cucumbers.
~ Stir the sauce till the sugar totally dissolves and refrigerate for 1-2 hours or overnight before serving.
BEST WITH: Kwek Kwek and Tukneneng.
- You can add more diced Cucumbers if you want.
- I have added water to dilute the sourness of the vinegar.
