Here’s a very simple stuffing for your roast chicken. I’ve learnt this roast chicken stuffing recipe from my TAFE, Bundamba days and always been etched in my mind because the ingredients are so darn simple to remember.
ROAST CHICKEN STUFFING (Bacon, Apple & Onion)
*this is enough for 2x 1.5kg chickens
INGREDIENTS:
1 large onion, finely diced
1/2 cup diced bacon
1 cup breadcrumbs
1/2 can (385g can) sliced apple, drained & diced
2 eggs
1/4 tspn ground pepper
1 tspn coarse table salt
*used AUS Measuring Cups & Spoons
COOKING PROCEDURE:
~ Place the diced bacon and onion in a large non stick pan on medium-high heat.
~ Sauté the bacon and onions until the diced onions becomes translucent. Once mixture is cooked, place in a bowl to let it cool completely.
~ Combine the cooled bacon/onion mixture with the breadcrumbs, diced canned apple, eggs, salt and pepper.
~ Mix all the ingredients till well combined.
~ Before stuffing the chicken, pluck any stray feathers on the exterior. Make sure the chicken cavity is clean and remove any excess fat around the outer part of the opening. Only place enough stuffing inside the cavity, to check…put the legs together and if there’s any stuffing being squeezed out, that means you have put too much.
Is that Canadian bacon? Funny. I just made a roast chicken, Thomas Keller-style, tonight.
