FILIPINO SALSA – KSP (Kamatis, Sibuyas at Patis)

What does KSP stands for, you might ask?  It’s kamatis, sibuyas and patis (tomatoes, onions and fish sauce) mix that is served as a side dish.  I called this a filipino salsa as it slightly resembles a mexican salsa minus the fish sauce.  This gorgeous side dish tends to make you eat more.  Just watch your “onion breath” after eating KSP as raw onions are included.


FILIPINO SALSA – KSP (Kamatis, Sibuyas at Patis)

INGREDIENTS:

2 large tomatoes

1/2 large onion

2 tbspn fish sauce

ASSEMBLING:

~ Wash tomatoes, dry with paper towel.  Remove the top stem bases of the tomatoes and cut into quarters.  Slightly de-seed the quarters and roughly slice them.

~ Dice onion and add to the tomatoes.

~ Stir in the fish sauce and mix all the ingredients well.  Can be eaten straight away or can be premix 1/2 hour before serving.

 

BEST WITH:  Fried fish or meat, grilled eggplants or steamed cooked prawns.


NOTES:
  • Don’t pre-made more than 1/2 hour because it will become too watery from the tomatoes.
  • I use the SQUID BRAND fish sauce, as it doesn’t stink that much as some of the other brands.  The taste is more smoother compare to the rest, where you can taste that raw salt and diluted water flavour.

    One way to leave out the patis for vegetarians is to sub a dash of soy and rice wine vinegar - delish!
