Ginataang Hipon (Prawns in Coconut Milk) sprung into my mind when I saw that banana prawns was on special for AUD$12.99 per kilo.  Haven’t cooked this dish for awhile now and what better time to cook it again and feature this recipe in Busog! Sarap!

Kulinarya’s theme for the month of January 2010 is ADOBO.


 

Adobo is considered as one of Filipino’s soul food.  There are many different version of Adobo, some add potatoes, some recipes have sauce, others are drier and others add coconut milk. This dish was called Adobo during the Spanish colonization of the Philippines, but it’s totally different with Spanish Adobo which is a combination of seasoning widely used in Spanish cooking.

Not a week goes by, without a special request from friends and family.  I don’t normally take pictures once I cook in batches as I often don’t have the time, but this morning I got plenty of time to kill before lunchtime pickup.  Since I started Busog! Sarap! my camera always resides on top of my freezer, so I thought to myself…what the heck, why not?  So here are some of my treats that my auntie requested for me to make.

Hotsilog (Hotdogs, Garlic Fried Rice, Fried Egg) is specially designed in my opinion for kids in mind.  Very simple “Silog” combo, served mainly at breakfast but can be enjoyed throughout the day.

Longsilog (Filipino pork sausage, Garlic Fried Rice and Fried Egg), in my opinion is the best from all the Silogs.  Serve this Filipino combo meal, 3x a day and I won’t complain, that’s how much I love Longsilog.

Tapsilog (Fried Beef jerky, Garlic Fried Rice and Fried Egg) is one of the classic in the Silogs range.  People have different versions of how to prepare the “Tapa” (Marinated Beef Jerky), some just marinate it for a couple of days and then cook it, others marinates the meat then air dry it before frying.

December 2009 just went by like a blur for me, I was planning to feature most of the SILOGS by the end of December but it didn’t happen.  From hanging decorations, buying and wrapping gifts, going out (a lot!), eating (a lot!) and cooking (a lot!).  Almost forgot….squeezing in cleaning the house from top to bottom before New Year (family tradition), so that positive energy can flow easily inside the house, left me grasping for time.  We even put loose change in every corner of the house for luck and prosperity….I know, I know…typical Filipinos!  So many beliefs for luck and getting rich.  Isn’t silly, Filipinos are religious but we believe in this kind of things.  To me, if it doesn’t harm anybody…why not???
